White Chicken Corn Chili
Recipe can easily be doubled by simply doubling all ingredients. Finely chopped celery, carrots, parsley, or other varieties of beans can be used in recipe, if desired. Can also serve with sour cream, tortilla chips, or cornbread.

Ingredients

  • 2 Tbspolive oil

  • 3 – 12oz can(s)white chicken meat

  • 2 – 4oz can(s)chopped green chiles

  • 2 – 15.5oz can(s)great northern beans (drained)

  • 2 – 11oz can(s)white corn (undrained)

  • 2 cchicken broth

  • 1/2 cchopped onion

  • 2 tspground cumin

  • 2 tspgarlic powder (optional)

  • 1 tspground oregano leaves

  • 1 tspground cilantro leaves

  • 1/2 tspground red pepper

  • 2 cshredded monterey jack and colby cheese

How to Make White Chicken Corn Chili

  1. Sauté onion in oil over medium-high heat for 2-3 minutes.
  2. Stir in broth, green chiles, and all spices. Simmer 30 minutes.
  3. Stir in chicken, beans, and corn. Simmer an additional 20-30 minutes.
  4. Garnish with Monterey Jack and Colby cheese.
