Tomato~Broccoli~Rice Soup
No cheese or cream in this broccoli soup, but it’s easy and very tasty!


  • 1 Tbspbutter or spread

  • 1/4 conion, finely chopped

  • 1/2 tspminced garlic

  • 4 cchicken broth, low sodium or homemade

  • 1 ctomato juice or v-8

  • 1 – .7 oz. pkgitalian salad dressing mix

  • 2 cfresh broccoli, chopped

  • 1 cbrown rice, cooked

  • 1/16 tspred pepper flakes

  • ·black pepper, to taste

How to Make Tomato~Broccoli~Rice Soup

  1. Sauté onion and garlic in butter until onion is soft.
  2. Whisk together the broth, juice and salad dressing mix until well blended and add to onions. (Note – If time allows, stir the dressing mix into the tomato juice earlier in the day and let sit in the refrigerator for a few hours to blend the flavors. Also, I like the Aldi and Lidl dressing mixes better than name-brand.) Simmer on low for 5 minutes.
  3. Stir in broccoli, brown rice and peppers. Continue simmering for another 5 minutes.
