No cheese or cream in this broccoli soup, but it’s easy and very tasty!
Ingredients

1 Tbspbutter or spread

1/4 conion, finely chopped

1/2 tspminced garlic

4 cchicken broth, low sodium or homemade

1 ctomato juice or v-8
-
1 – .7 oz. pkgitalian salad dressing mix

2 cfresh broccoli, chopped

1 cbrown rice, cooked
-
1/16 tspred pepper flakes
-
·black pepper, to taste
How to Make Tomato~Broccoli~Rice Soup
- Sauté onion and garlic in butter until onion is soft.
- Whisk together the broth, juice and salad dressing mix until well blended and add to onions. (Note – If time allows, stir the dressing mix into the tomato juice earlier in the day and let sit in the refrigerator for a few hours to blend the flavors. Also, I like the Aldi and Lidl dressing mixes better than name-brand.) Simmer on low for 5 minutes.
- Stir in broccoli, brown rice and peppers. Continue simmering for another 5 minutes.
