Pumpkin Spice Cake with Cream Cheese Frosting
This is me, trying to get rid of all the pumpkin puree in my freezer from last summer’s garden!


  • 1 csugar

  • 2eggs

  • 1/2 ccanola oil

  • 1 cpumpkin puree

  • 1 tspvanilla

  • 1 tspbaking powder

  • 1/2 tspbaking soda

  • 1/2 tspsalt

  • 1 ccake flour

  • 1 tsppumpkin pie spice

  • 1/2recipe for Cream Cheese Frosting or canned cream cheese frosting

How to Make Pumpkin Spice Cake with Cream Cheese Frosting

  1. Preheat oven to 350 degrees.
  2. Grease and flour and 8×8 square cake pan
  3. In a medium size mixing bowl, sift flour together with baking powder, baking soda, salt and pumpkin pie spice.
  4. In a separate bowl, whisk together eggs, oil, sugar, and vanilla then stir in pumpkin.
  5. Stir flour mixture into liquid mixture and pour into greased cake pan.
  6. Bake in oven for 34-40 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool cake in pan. When cake is completely cooled, frost with cream cheese frosting.
