Pasta Squares with Peas in Pancetta Broth

  • 8 ozlasagna noodles

  • 1/3 cpancetta chopped

  • 2 Tbspbutter

  • 1 smallonion chopped

  • 3 clovegarlic minced

  • 4 cchicken stock

  • 1 Tbsptomato paste

  • 2 cfrozen peas

  • ·fresh parsley minced

  • ·salt and pepper to taste

  • ·freshly grated parmesan cheese for ser ving

How to Make Pasta Squares with Peas in Pancetta Broth

  1. Cook the lasagna noodle in boiling salted water until al dente. Drain and let cool. Cut into squares and set aside. Cook the pancetta in a large pan until browned. Remove from pan and set aside. Add butter to pan. Add the onion and garlic and saute 5 minutes. Pour in the chicken stock and bring to a boil. Add the peas and tomato paste. Cook 2 minutes. Add the lasagna noodles and pancetta to the pan.
  2. Cook until everything is warmed through. Taste and adjust for salt and pepper. Add the parsley and garnish with the Parmesan cheese
