Easy Indian Chicken Curry
This is a basic curry. You can add your own spin by adding more spice or less sugar. It’s just so good.


  • 3 Tbspvegetable oil

  • 1 largesweet onion sliced

  • 1 tspsugar

  • 2 largetomatoes diced

  • 2 Tbspgarlic paste

  • 1 Tbspginger paste

  • 2 tspeach coriander powder and garam masala powder

  • 1 tspground cumin

  • 1/2 tspeach red chili powder & turmeric

  • 1/4 cbrown sugar

  • 3boneless skinless chicken thighs cut into bite size pieces

  • 1 chot water

  • 2 Tbspfresh cilantro chopped

  • ·basmati rice & naan for serving

How to Make Easy Indian Chicken Curry

  1. Add oil to a large skillet. Add the onions and sugar and cook until caramelized. Remove the onions with a slotted spoon and let drain on paper towels. leave the oil in the pan.
  2. Add the onions to a food processor and process into a paste. Remove and set aside.
    Add the tomatoes to the food processor with the ginger and garlic paste. Process until well mixed.

  3. Add the spices & brown sugar to the tomatoes. Add the onion paste back to the skillet and stir fry over medium high heat for 3 minutes. Add the tomato mixture and cook 2 or 3 minutes until the oil begins to separate. Add the chicken pieces and the hot water.
  4. Simmer for about 15 minutes. Top with fresh cilantro. Serve with basmati rice and naan
