Cauliflower & Gorgonzola Soup
My husband doesn’t like cauliflower or Gorgonzola cheese but he loves this soup.

Ingredients

  • 2 Tbspolive oil

  • 1 mediumonion chopped

  • 1 Tbspflour

  • 1 1/2 chalf and half

  • 1 cchicken stock

  • 1 mediumhead of cauliflower cut into small florets

  • 6 ozgorgonzola cheese cubed or crumbled

  • 2 tspwhole grain mustard

  • ·salt and pepper to taste

How to Make Cauliflower & Gorgonzola Soup

  1. Place oil in a pot and add the onion and saute until softened. Do not let it get dark. Add the flour and cook 1 minute. Add the half and half and chicken stock stirring constantly and bring to a boil
  2. Add the cauliflower and simmer for 20 minutes until the cauliflower is very tender. Add the Gorgonzola and let it melt.
  3. Puree in a food processor until smooth. Return to the pan and add the mustard. Taste and adjust for seasoning and serve.
