BONNIE'S TURKEY POPPERS FROM LEFTOVERS
This is a great way to use up your leftovers, and I think you will enjoy making this recipe your own when you come up with ideas for other varieties of Poppers. I served these Turkey Poppers as our main entree with a nice rich turkey gravy poured over the top, but these Poppers are also good plain and heated up in the microwave for 30 seconds as a quick lunch. What a treat. Kids will love them as well as adults. I can’t wait to make them for the RV. This takes leftovers to a whole new level. Enjoy!

Ingredients

  • POPPER DOUGH

  • 9medium sized buttermilk biscuits ready to bake (refrigerated or homemade recipe below)

  • POPPER FILLING

  • 1/2cup cooked turkey stuffing

  • 1/2cup prepared cranberry sauce, canned or homemade

  • 3/4cup diced, cooked turkey, breast or thigh meat

  • OTHER

  • 1 eggfor egg wash

  • 2cups homemade turkey gravy

  • HOMEMADE BISCUITS

  • 1cup organic all purpose flour

  • 1cup organic bread flour

  • 1/2teaspoon salt

  • 3teaspoons baking powder

  • about 3/4cup buttermilk, chilled

  • 1/3cup crisco, chilled

How to Make BONNIE’S TURKEY POPPERS FROM LEFTOVERS

    Gather all your ingredients before you begin. Bake on a parchment lined pan in a 375 degree oven for about 20 minutes or until golden brown. The homemade biscuit recipe makes 9 biscuits.

    FILLING
    Place turkey, stuffing, and cranberry sauce in small dishes. Use a flat plate to assemble poppers.

    HOMEMADE BISCUITS (Skip this section if you are using canned biscuits and go to step 8 for instructions on rolling)

    Biscuit ingredients:
    You will need all purpose and bread flour, Crisco, salt, baking powder, and buttermilk. Whisk all ingredients well except the buttermilk..
    (Yes, you can use the buttermilk blend if you wish.)

    Cut the chilled Crisco into flour until it is the size of small peas.

    Add about half of the buttermilk to the flour mixture and then the rest a little at a time until you have enough to make a craggy dough. Handle it gently to get a nice flaky biscuit. You want dough that you can roll out and handle with your hands. But you must not overmix the dough.

    Roll out the ball of dough, and roll it to 1/2 inch thickness. Cut with a medium size biscuit cutter.

    Roll each biscuit flat and lay on a flat plate to fill. It is easiest to roll and fill one popper at a time and then place the finished popper on the baking pan, seam side down. (It will look fine after it is baked)

    Now for the fun part. The filling! This is easy. Just put 1 teaspoon of stuffing and one teaspoon of cranberry sauce and one teaspoon of diced turkey on a rolled out flat biscuit..

    Gather edges to enclose the filling in the popper.

    Pinch the edges together.

    Form the filled dough into a round ball. Place the balls on a parchment lined, shallow baking pan.
